Quick Wet Brine (Best): Submerge chops for 30–60 minutes in a solution of 1 litre cold water, 3 tbsp salt, and 2 tbsp brown sugar.

Dry Brine: Season heavily with salt 2–12 hours ahead and leave uncovered in the fridge on a wire rack to dry out the skin for a crispier sear.

Score the Exterior Fat Strip: Pork loin chops have a thick strip of fat along the curved outer edge. Use a sharp knife to score 3 or 4 small vertical slits through this fat cap. This stops the fat from contracting in the hot pan, which would otherwise cause the chop to cup up and lose contact with the skillet.

Sear the Fat Cap First: Stand the chops upright on their fat strip with tongs in a smoking-hot cast-iron skillet for 1 to 2 minutes to render that fat layer into a sizzling cooking oil.

Fast Sear & Frequent Flipping: Lay the chops flat and sear over medium-high heat, flipping every 1 minute for a total of 4 to 5 minutes. Continuous flipping cooks the meat evenly without creating a thick, overcooked gray band under the crust.

Butter Baste the Delicate Tenderloin: During the last 90 seconds, drop the heat to medium and add 2 tbsp butter, 2 crushed garlic cloves, and fresh sage or thyme. Spoon the foaming butter continuously over the top—focusing extra butter over the smaller tenderloin section to baste it in fat.

Target 60°C Internal Temp (Blush Pink): Modern pork does not need to be cooked well-done! Pull the chops out of the pan at 60°C–62°C on an instant-read thermometer.

Rest for 5 to 7 Minutes: Transfer to a warm board and pour over the pan juices. Carryover heat will bring the internal temp to a perfect 63°C–65°C (Medium)—leaving the meat tender, juicy, and slightly pink in the very center.
